Winemaking: ' The fruit here is picked and handled separately, with a pre ferment cold soak on skins for subtle phenolic extraction. The juice is then pressed and fermented in stainless steel before being racked and blended as ferment slows. Prior to winter 1/3 of the wine is racked to barrels and the remainder to tank. All native yeasts, no filtration or fining and a small addition of sulphur prior to bottling.' - Tim

'Savoury, lean, crisp and textural - something to share with friends on hot days and have a good time. Fresh crunchy lemon juice acidity and good time tropical fruit, subtle white pepper and texture born from extended time on lees and a short soak on skins prior to ferment. A briny quality this year…maybe even lacto-pickle. Definitely nautical! Not for inspiring endless critique and considered evaluation…just a nice summer drink when you need it most.' - Tim
