Farming Principles: From the esteemed Dash Farm block, perched at a lofty 460m elevation, the Syrah vines bask in an easterly exposition, benefiting from the dip in the mountain's western side. The block's granite-rich soil and meticulous N/S orientation form the bedrock of this delicate creation.
Winemaking Procedure: "Ultra-gentle whole bunch pressing. Fermented wild, the wine gracefully matured in stainless steel until primary fermentation was complete (around 6 weeks). Malolactic fermentation followed in stainless, followed by a settling period before a classic tirage bottling in early June 2023. Released without disgorgement, this Little Reddie Mountain Fizz carries the essence of its origin, with no added sulfur."
