Winemaking: 'Our winemaking is carried out as naturally as possible: with only native yeasts, without enzymes, without chemical inputs and with little or no filtration or sulfur. For red vinification, we use semi-carbonic vinification, where we work to create several superimposed layers of whole bunches and destemmed grapes. Then, after four or five days, we do a very light mini pumping-over, accompanied by a punching down of around 20 centimeters on the top of the vat. All the reds are then aged in (old) barrels.'

Tasting Notes: Vibrant red fruits like cherry, raspberry, and cranberry combine with distinct mineral characters as a result of the "Les Crays" vineyard's chalky soils. This results in lively acidity and hints of spice, topped off with an earthy finish. This is a great gift or selection for a special dinner.
Fun Fact: The domaine was first created by the monks of the Cluny Abbey in 910. It has been operated under 100% organic farming practiced since 1954, with biodynamic farming practices from 1998 onwards.
